Ingredients

2 sweet potatoes, diced
1 onion, diced
1 bell pepper, sliced
1 can of diced tomatoes
1 cup of chicken broth
1 cup of cooked turkey (or chicken)
1 cup of mixed nuts, roasted
2 cups of cooked rice

Seasoning

2 tsp curry powder
1 tsp cumin
1/2 tsp turmeric
1/2 tsp cinnamon
Salt and pepper to taste

Steps

In a large pot, sauté the onion and bell pepper until softened.
Add the sweet potatoes, canned tomatoes, chicken broth, curry powder, cumin, turmeric, and cinnamon. Simmer until the sweet potatoes are tender.
Stir in the cooked turkey and season with salt and pepper. Serve the curry over cooked rice, and garnish with roasted mixed nuts.
