Ingredients

1 cup Arborio rice
2 cups vegetable broth
1/2 cup canned pumpkin puree
1 tomato, diced
1/2 onion, diced
2 cloves garlic, minced
2 tbsp butter
1/4 cup grated cheese

Seasoning

1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried thyme

Steps

In a pot, sauté the onion and garlic in butter until softened.
Add the Arborio rice, stirring until translucent around the edges.
Pour in the vegetable broth a little at a time, stirring frequently, until the rice is creamy and al dente.
Stir in the pumpkin puree, diced tomato, cheese, salt, pepper, and thyme, cooking for a few more minutes until well combined.
Serve the risotto hot, garnished with extra grated cheese and a sprinkle of black pepper.
