1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper

Steps

Preheat the oven to 400°F (200°C).
Slice the potatoes and onion into wedges. Place them in a baking dish and drizzle with coconut oil. Season with salt, pepper, and half of the minced garlic.
Zest and juice the lemon, then mix the lemon zest and juice with the remaining minced garlic, oregano, and thyme.
