Ingredients

2 salmon fillets
2 sweet potatoes
1/4 cup maple syrup
1 bell pepper
4 tbsp olive oil

Seasoning

1 tsp salt
1 tsp black pepper
1/2 tsp paprika
1/2 tsp garlic powder

Steps

Preheat the oven to 400°F.
On a baking sheet, toss the cubed sweet potatoes and sliced bell peppers with 2 tbsp of olive oil, salt, pepper, and paprika. Roast for 20 minutes.
Place the salmon fillets on a separate baking sheet, brush them with maple syrup, sprinkle with salt, pepper, and garlic powder, then roast for 12-15 minutes.
Serve the maple glazed salmon with the roasted sweet potatoes and bell peppers.
