Hawaiian Mahi Mahi with Coconut Rice Recipe

Ingredients

2 Mahi Mahi fillets
1 cup coconut milk
1 cup jasmine rice
1 can pineapple chunks

Seasoning

Steps

In a saucepan, combine the coconut milk, 1 cup of water, and a pinch of salt. Bring to a boil.
Stir in the rice, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
