Grilled Peach and Tofu Salad Recipe

Enjoy the sweet juicy flavor of grilled peaches paired with the velvety texture of tofu in this light and refreshing salad.

Ingredients

2 peaches, halved and pitted
8 oz firm tofu, drained and cut into cubes
4 cups mixed salad greens
1/4 cup sliced almonds

Seasoning

1/4 tsp salt
1/4 tsp black pepper

Steps

Preheat a grill or grill pan to medium-high heat.
Grill the peaches for 2-3 minutes on each side until grill marks appear, then remove from heat and let cool slightly.
In the meantime, grill the tofu for 2-3 minutes on each side until lightly charred.
Arrange the salad greens on a serving platter, place the grilled peaches and tofu on top, sprinkle with sliced almonds, season with salt and black pepper, and serve.
