Easy Mango Coconut Rice Pudding Recipe

In a saucepan, combine the rice and coconut milk, then bring to a simmer over medium heat.
Stir in the sugar, vanilla extract, and cardamom, then continue to simmer for about 25-30 minutes, or until the rice is tender and the mixture has thickened.
Remove the pan from the heat, then gently fold in the diced mango and shredded coconut.
